Have you guys gone apple picking?!? If you have lots of apples you need to make apple crumble! I love this recipe because it’s quick and easy (and foolproof). I LOVE it with vanilla ice cream.

Healthy 3 Bean and Beef Chili

One of my kids’ favorites! This is a very easy one pot dinner. I love setting up a toppings area where everyone can top their chili with their favorite things – chilis, sour cream, cheese, scallions. The other thing I love about this recipe is you can sub out the beef for chicken or turkey OR you could just do beans or do Impossible Meat. We’re actually eating lots of Impossible Meat right now.

Cozy Butternut Squash Soup

The nutty roasted flavor of butternut squash is so comforting and if you’re following Whole30 this soup is for you! It’s creamy and decadent without the additional cream!

This one probably isn’t low calorie BUT it’s so good. Creamy goats cheese with tangy figs and salty bacon. This pairs nicely with red white and crusty bread. A perfect dish to enjoy with fall guests!

Delicious Pumpkin Dip

Raise your hand if you love pumpkin spice (I’m raising my hand high over here)! PSL season makes me so happy. If you love pumpkin spice this recipe is for you! It’s a lovely dessert dip for cookies but it also tastes lovely smeared on toast.

Yummy as a meal or a comforting side. Delicious and carmelized roasted summer squash with creamy orzo and shavings of salty Parmesan cheese. It’s a bowl of goodness sure to make you smile.

Reece’s Pieces Cookies

I still remember seeing ET in the cinema and eating Reece’s Pieces. I know I’m dating myself. I had far too much fun baking these cookies with our kids and ate far tooooooo many of them. This is a favorite of ours no matter what season but I do think the colors look very fall-ish.

Hearty Ratatouille

Another one pot meal that I LOVE! It’s great for lunch with some cheese sprinkled on top, lovely as a side but I also love it on sandwiches. This is a favorite with tangy tomatoes, eggplant, peppers, and onions. The capers add a tangy, salted surprise.
