I can’t wait to share this easy and refreshing blueberry coconut cocktails with you! Perfect to serve to family and friends out by the pool or on your back patio. These do have alcohol in them but you can easily make the non alcoholic, before I share the recipe I want to share more about blueberry picking.

We feel very lucky that we have a wonderful blueberry farm only about a five minute drive from our home. Tree-Berry Farm feels like stepping back in time. You pull down the dirt path, grab a tin pail and start picking. You’re charged at the end by weight. Good old fashioned fun!

I’ve taken the boys blueberry picking since they were very, very little. In fact, the first time I went picking with John I was heavily pregnant with Conor – it was August and Conor arrived September 1st.

Luke was off last week so we went with the kids. If you plan on going, check their website because some days they close to allow for ripening.

For me, blueberries are a true taste of summer. I remember my mom making the most luscious creamy blueberry pie. It looked like a pale purple and tasted like heaven. I also have fond memories of Jordan Marsh Blueberry Muffins. We made these the minute we got home with this recipe. Everyone had more than one!!!

We often compete to see who can pick the most berries.

I’m hoping to go back many times this summer because fresh picked blueberries taste so much better than store bought.

Okay, ready for these cocktails?!? We enjoyed the muffins in the morning then I mixed up these cocktails to enjoy poolside.

With only a handful of ingredients and a blender you can whip these Blueberry Coconut Cocktails up pretty quickly.

What I LOVE about these is they aren’t too sweet! You get the taste of blueberry and a slight hint of coconut BUT it isn’t sugary sweet. The ice makes it so refreshing so it’s more like a blueberry coconut slushie. I’ve used vodka in these with a tiny bit of Triple Sec BUT you could just make slushies subbing out the liquor for coconut water 😉

What You Need

  • 2 Cups Blueberries (fresh picked if possible)
  • 6 Cups Ice
  • 6 oz Vodka
  • 1 Tablespoons Triplesec (optional)
  • 4 Tablespoons Creme of Coconut

Method

Step 1 – Wash blueberries thoroughly and remove and stems or blueberries that are past their best.

Step 2 – Fill your blender with all the above ingredients. The Triplesec gives a light orange flavor but is not essential to this cocktail. We tried it with and without and liked it both ways.

We have the Super Q Blender by Breville and absolutely love it. I use it every day for making smoothies but it does so much more – makes nut butters, desserts, soups, frozen desserts. I highly recommend this blender if you’re looking for one. I actually wrote this post about it with four healthy recipes in it.

Step 3 – Once mixed pour out into glasses. This makes four to six smaller glasses.

Step 4 – Thread blueberries on a bamboo toothpick as a garnish.

Serve Immediately!

I served our blueberry coconut cocktails on an old silver tray that belonged to my mom. I love that is well loved and has patina.

I scattered blueberries, pretty limelights from our yard (yes, they’re finally in bloom), and added these sweet rattan tea light holders.

My friend Nancy of West End Weavers made the tea light holders with pretty glass yogurt pots. She was at the Ladies Shopping Night at the SBA the other night. I did a little shopping while selling some note cards of our own 😉

Blueberry Coconut Cocktails

Refreshing taste of summer in a glass!

Equipment

  • Blender

Ingredients
  

  • 2 Cups Blueberries Fresh picked if possible
  • 6 Cups Ice
  • 4 Tablespoons Creme of coconut I like the squeezable kind
  • 6 Ounces Vodka
  • 1 Tablespoons Triple Sec (optional)

Instructions
 

  • Wash and clean blueberries. Remove stems and any blueberries that look over-ripe.
  • Place all the ingredients in blender and blend until combined. You want a slushy / icy mixture.
  • Pour into glasses.
  • Garnish with a bamboo toothpick with blueberries on it.
  • Serve immediately

Notes

Delicious served outdoors in the summer months. Great for a BBQ, pool party or other summer gathering.
Y0u can make these non-alcoholic by subbing out the vodka and triple sec with coconut water.
