Blueberry of Happiness
Happiness is a bucket full of blueberries…
On Monday we headed to Tree Berry Farm, a local blueberry farm, just down the road. At Tree Berry Farm life seems a bit simpler and uncomplicated.
Amongst the blueberries you can think. You can take that extra moment to find just the right one.
The colors of the blueberries are so amazing. You all know I love blue. Well, these shades were just divine; periwinkle, to bright blue to navy.
Conor could have stayed there all day. He enjoyed picking so much.
July is National Blueberry month. Did you know that? No, I didn’t either.
Going picking just seemed like a fun thing to do and, oh my, it was!
Happiness is picking blueberries….
and eating them.
I know you’re probably saying what is Danielle going to do with all these blueberries. Well, eat them of course. We washed them all when we got home. We patted them dry and froze the ones we weren’t going to use immediately. So they are ready for when want to make muffins or blueberry pie or eat them frozen (which is delicious by the way).
With the fruits of our labor we made Blueberry Parfaits:
These are heaven! Oh, and might I add healthy?!? Oh, yeah, and only 3 ingredients.
Healthy Happiness Filled Blueberry Parfaits
– Fresh Blueberries
– Non Fat Greek Yogurt
– Gingersnap Cookies
To make:
1. Get out pretty glasses or mason jars.
2. Have your child crush the gingersnap cookies. Conor loved this part.
3. Fill your jars. First with crushed gingerbread cookies, then yogurt, then blueberries. Repeat until you get to the top.
4. Your parfaits are done and ready to eat!

Tomorrow morning I’ll be heading to Atlanta for the Haven Conference.

The best thing about summer is the simple, fresh ingredients and easy recipes. I picked my first tomato from my garden last week and was so thrilled!
