Winters here in our seaside town can be harsh. I’m not exaggerating. The news trucks flock to our seaside town to see the flooding, the high tides, and the blizzards. This past winter was pretty mild BUT we did have lots of below freezing temperatures. I’d look out at our snow filled yard, our pool looking like a crater. I’d tell Luke, “I just want to sit by the pool and sip Piña Coladas.” Well, now that summer’s here I thought I’d make good on my word to mix up the best frozen Piña Coladas.
Have I ever told you that I grew up in a restaurant? I’m not sure I’ve shared this on the blog or not. My parents ran a lovely restaurant in an historic mansion for 10 years on Boston’s north shore. It was called Baldwin’s. My mom was the beautiful hostess, party planner, and interior designer. My dad the controller and amazing bartender. The funny thing was that my dad didn’t drink but was an AMAZING bartender. I grew up working there. I bussed tables, I waitressed, and finally I took over the bartending during the summer when my dad needed a break. Making these cocktails on Sunday reminded me of bartending with my dad.

I love mixing up cocktails when we have friends over or just to make it feel like we’re on vacation in our own backyard. If you want this vibe my classic frozen Piña Coladas work like a charm. I was instantly transported to St. John or Bermuda right here in Scituate 😉

Classic Frozen Piña Coladas
Mix together crushed ice, light and dark rum, coconut cream and fresh pineapple for an island worthy drink!
What you Need
- 4 ounces dark rum
- 4 ounces light rum
- 4 ounces coconut cream
- 1/4 of a fresh pineapple
- the juice of half a lime
- 3 cups ice
- blender – I LOVE mine!
Method
Blend together all ingredients. I used the smoothie setting but cancelled after 20 seconds.
Garnish with a slice of pineapple and a real Marishino cherry. I like to use these bamboo cocktail sticks to give an island vibe. Serve with the Piña Colada song (I listened to it on repeat while writing this post). The above measurements are for one piña colada. What I like to do is pour the whole can of coconut cream in and make a big batch of Piña Coladas for a crowd to share.
One sip and you’ll feel like your a million miles away – on island time!

No pineapple juice? Or mixer? How many glasses does this make?
This is my take on a Piña Colada. Instead of pineapple juice I used fresh pineapple and the juice of half a lime. No Piña Colada bottled mixer as I can find them to be very sweet. This makes one large glass. I like to pour the whole can of coconut cream in the blender and make a big batch for a crowd of friends to enjoy. Hope you like them!
