Dark and Stormy Cocktails
I love mixing up cocktails for Luke or guests when we’re having them. This is such a simple recipe – only three ingredients! Get my Dark and Stormy Cocktails recipe!
Did I ever tell you my family had a restaurant while I was growing up? For readers who live in Massachusetts you might remember it. It was called Baldwin’s in Woburn and it was in a colonial mansion. I used to love bartending, when I got old enough I used to help my dad behind the bar. Today I have a really easy recipe that’s perfect for a holiday gathering or an intimate night in by the fire. You can pretend you’re some place warm sipping these spiced cocktails.
Jump to RecipeA Dark and Stormy is a rum based drink. It only has three ingredients. You may be wondering about the name. Legend has it that the name came from a sailor saying the color of the cocktail looked like dark storm clouds over the sea.
I remember the first time I ever had a Dark and Stormy Cocktail was at the Royal Sonesta in Bermuda. It was my first proper cocktail – I was 18 (drinking age in Bermuda). I sipped on the beach in the sunshine (not realizing the sunshine would make the alcohol go straight to my head and hoping my mom and aunt didn’t realize)…
I’m a lot older now and have learned my lesson about drinking in the sun. Ha! Ha! I love mixing these up for us to enjoy a “date night” in. There also really nice to make for a party because they’re really easy.
You’ll need dark rum, fresh lime juice, and ginger beer. I had Mount Gay rum so you may want to use an even darker rum to get that dark color.
I took a photo by the tree but don’t think it looks as nice as on the couch.
My favorite ginger beer is by Fever Tree it’s really nice and spicy.
I added some rosemary sprigs to make it feel more winter-y. Okay, now we’re ready for those blizzards 😉

Dark and Stormy Cocktails
Ingredients
- 1 cup ice crushed
- 2 ounces dark rum
- 1 squeeze fresh lime juice
- 8 ounes ginger beer Fever Tree
- 1 sprig rosemary for garnish
- 1 wedge lime for garnish
Instructions
- Step 1 – fill glass with crushed ice.
- Step 2 – add rum, lime juice, and top with ginger beer.
- Step 3 – garnish with rosemary sprig and wedge of lime
- Serve and enjoy immediately!

I’ve never had a Dark and Stormy but have always wanted to – now that I know it involves Ginger Beer I’ll have to try it! (oh and Fever Tree is the BEST! Their tonic is also amazing!)
