Easy Lobster Salad Appetizer

When it’s hot and humid I enjoy lighter meals. This easy lobster salad appetizer is perfect for a light lunch / dinner or perfect as an appetizer.

On a hot day, bread can feel too heavy so if you’d like the lobster salad without carbs try it on endive!

My friend Becky actually served this over the winter and I tucked this idea away for summer. I couldn’t stop eating her bite size lobster canapes.

I did the lobster the same way I did the lobster rolls, but will include the recipe below so you have it in one place.

Easy Lobster Salad Appetizer

Ingredients

  • 1/2 Pound of cooked lobster meat
  • 2 tablespoons of mayo
  • Juice from 1/4 of a lemon
  • 1 Scallion chopped
  • 1 Celery rib finely chopped
  • Endive
  • Salt and Pepper to taste

Method

Step 1 – Rinse the lobster meat in a colander and chop it into smaller pieces.

Step 2 – In a mixing bowl combine lobster, mayo, lemon juice, scallion, celery – carefully folding the mixture. Add salt and pepper to taste.

Step 3 – Wash endive leaves and place lobster salad in them. Serve immediately.

We’re lucky enough to have fresh lobster meat from Mullaney’s Seafood. If you don’t have lobster meat you could also try this with canned crab or tuna or chop up some cooked shrimp.

Ingredients
  

  • 1/2 pound cooked lobster meat
  • 2 tablespoons mayo Hellman's
  • 1 tablespoon lemon juice
  • 1 scallion chopped
  • 8 endive leaves
  • 1 celery rib finely chopped
  • salt and pepper to taste

Instructions
 

  • Prep cooked lobster meat – rinse in colander and chop into smaller pieces
  • Mix – in a mixing bowl combine lobster, mayo, lemon juice, scallion, celery – carefully folding the mixture
  • Add salt and pepper to taste
  • Wash endive leaves
  • Place lobster salad on endive leaves
  • Serve immediately with lemon wedges on the side

Notes

This is lovely during the summer as a fun appetizer or lunch.
Also wonderful for winter gathering served with champagne.
