English (Muffin) Pizzas
Let me preface this by saying I LOVE English Muffins and eat them most mornings for breakfast.
When I was little my mom always made me English Muffin Pizzas and I LOVED them. I mean I ate them most days for lunch. Well, I started making them again with little Conor.
They are so easy to whip together especially on a warm summer day when you really just want to be outside! But of course, Conor, and his European tastes had to go and call them “English Pizzas”. As a side note, Conor thinks he can speak Italian. He puts on an Italian accent and thinks he’s speaking Italian. My mom, who’s dad was Sicilian, taught him a few phrase like Ciao Bella (Hello, Beautiful!) and Come sei bella (How beautiful you are!). Okay, my mom’s Italian is limited.
Anyway, these pizza aren’t English in any way, shape, or form as they don’t have Thomas’ English Muffins in the UK either (so sad to find that out when I arrived for my junior year abroad)….But Conor says they are. So here is how to make them:
Conor’s English Pizzas
Ingredients
– English Muffins (I like to use Thomas’ English Muffins) – Olive Oil – Tomato Sauce – Mozzarella Cheese (shredded)To Make:
Heat your oven to 325 degrees F. Toast your English muffins. Then oil the pan.
This is when you can have your little one help. Add sauce and cheese to your toasted English Muffins.
Conor likes to add cheese on the bottom AND cheese on the top of the sauce. I guess his version is the Cheese Lovers’ English pizzas!
Leave in the oven until the cheese melts and goes a golden brown color.

They are delicious al fresco with some lemonade!
They are amazing to share with a little helper or two as well!
I know my mom probably just threw these together, but one bite brings me right back to the time when I was Conor’s age.
An age when I dreamed of marrying a prince, living in England and eating pizza every day. Hmmm, I guess not much has changed…
I know I’m going to miss my little helper when September arrives because he’s off to full day kindergarten.

OMG, my mom made these too, I loved them and I felt so cool because they were easy for me to do with her watching. Thinking she didn’t want tomato sauce all over, LOL.
