Fit Fridays: Green Beans, Chicken & Crumbled Feta




The “Battle of the Bulge” continues with the end of our second week in this weight loss challenge.  I still need to be a bit better at making time to get to my yoga classes or out for a walk but we’ve been eating healthy.  I love salads but sometimes I can get sick of them, especially when it is cold out.  Do you feel the same?  If so, then you might love this recipe – Green Beans with Chicken and Crumbled Feta. My friend, Jen, gave this to me when I was trying to eat loads of salads a few years ago.  It is so easy to whip together and has the most amazing flavor.  The avocado and feta make it feel like a guilty treat as it is filled with rich satisfying ingredients.  

We actually had it last night for dinner.


Green Beans, Chicken & Avocado


Jen’s Green Beans with Chicken and Crumbled Feta

(slightly modified by me)

1 pound skinless, boneless chicken breasts
1 TBSP olive oil (I love to use the Roman Table’s Tuscan Olive Oil)
1 lemon
6oz fresh green beans ( 1/2 cup per person)
1/2 cup crumbled fresh feta cheese (I like Trader Joe’s Fat Free Feta)
several small tomato chopped 
1 avocado 
salt & pepper to taste

1.  Broil chicken with dash of olive oil and lemon slices on top for 4-5 minutes.  Turn chicken halfway through, and squeeze the lemon juice over the chicken.  Cook another 4-5 minutes.  (Last night, I got tired of waiting for the oven to heat up so I did it in a cast iron skillet, squeezing lemon on the chicken.  We’ve also done it on the grill in the summer).

2.  When chicken is almost done, drop green beans in boiling water and boil 1-2 minutes.  Take them out while still crispy.  Strain green beans.  Toss them into a bowl with 1 TBSP olive oil, crumbled feta and chopped tomato.  You want the green beans to still be warm when you add them to melt the cheese slightly.  Add in the chopped avocado, if desired.  



3.  When chicken is done, cut into pieces and toss with green bean mixture.  Serve.

Yum. I need more recipes like this. It’s been colder than normal and some days I just don’t want a cold salad. This is perfect.
