Goat’s Cheese and Leek Omelette & the Sunday Paper
To me there’s nothing better than savoring a Sunday morning as a family. I have the most amazing Goat’s Cheese and Leek Omelette to share with you today.
It’s time for our Cozy Living Series hosted by my friend Jennifer over at Town & Country Living.
In this series, we focus on finding hygge, or comfort, within our lives and homes. Last month I wrote about Slow Decorating. I guess you could think of today’s post as slow enjoying or slow eating.
Our weeks are usually pretty hectic, between getting the kids to school, walking the dogs, work, blogging and many, many, many projects. Sundays are our quiet, lazy days.
I love sleeping in on Sundays, well, sleeping longer than 6 am as that’s what time I usually have to be up to get John out the door to school.
So I usually make some coffee and then turn the fireplace on and sit and read.
About two months ago, we started subscribing to the New York Times. We get updates to our phone and the Sunday paper delivered to our door. Last Sunday, we read a bit of the paper and then took the boys for a bike ride to Thayer Woods (if you live locally it’s a wonderful place to bike as a family). On the way home we stopped at a new bakery, Mainstay Bakery, and picked up fresh baked bread and scones.

We bought the scones and bread for the boys. Luke and I are currently doing Keto which is low carb and no sugar. I haven’t really mentioned it on the blog as I wanted to make sure it was sustainable before sharing but we’ve been doing it for maybe a month and a half and I’ve lost 11 pounds and Luke has lost 14. We still have more we want to lose but we’re feeling so much better for cutting down on the carbs. On Keto you can have dairy which is huge for us as we both love cheese.
Most mornings we have omelettes and on Sundays Luke makes these delicious goat’s cheese and leek ones. The creamy and tangy goats cheese makes them feel decadent and not diet friendly 😉
Goat’s Cheese and Leek Omelettes
Ingredients
- 4 eggs
- Leeks, sliced
- Mushrooms, roughly chopped
- Pepper, roughly chopped
- Fresh basil (optional)
- herbs de provence
- Salt and Pepper (to taste)
- Goat’s Cheese
On Keto you need to limit your onions, as they have more sugar, so we use leeks as a substitute.
Method
Step 1 – Sautee mushrooms, leeks and peppers in ghee.
Step 2 – Beat 4 eggs and season with Herbs de Provence, Salt and Pepper.
Step 3 – Pour egg mixture into the cooked vegetables. When almost set, add the goat’s cheese.
Step 4 – Flip omelette in half, like a crescent shape.
Serve immediately with the Sunday paper!
Jane Austen once said, “Ah, there is nothing like staying home for true comfort.” I believe this to be true.
We enjoyed these decadent omelettes while the boys enjoyed fresh bread and scones.
