Mango and Mixed Green Salad |
I can eat healthier if I can keep my mouth entertained….
This salad does just that! I had some extra mangoes – we’ve been using them for smoothies, but thought they might be a fun addition to salad, and boy was I right! The mangoes add a sweet treat to this mixed green lunch.
The toasted almonds add a nutty flavor and some satisfying crunch while the lemon zest and juice adds a lovely fresh, citrus punch.
This salad is super easy and ready in minutes. Here’s how to make it:
Mango and Mixed Green Salad
Ingredients
– One mango (chopped)
– 4 handfuls of baby mixed greens
– 1/2 cup toasted almonds
– 1/3 cup Feta Cheese
Toast the slivered almonds in a non-stick pan until golden and mix together the above ingredients in a large bowl.

For the Dressing
– 3 Tablespoons Avocado Oil
– 1 Lemon, Zest and Juice
– Cilantro (a handful, chopped)
– Pepper to taste
Mix together avocado oil (available at specialty grocery stores), lemon zest and juice and chopped cilantro.
Toss all in large bowl and serve!
The delicate flavors of this salad are amazing. The fresh greens and sweet mango are enhanced by the toasted almonds, tangy lemon and salty feta. As my kids would say, “There’s a party in my tummy, so yummy, so yummy!”

I often like to add nuts and dried fruits( like raisins and cranberries) to my salad,
but fresh mango is way better!!
