Pancake Party!

Good Morning!  Hope you are all having a very happy Sunday.  One of our favorite things to do on Sunday morning is making pancakes.  Well, I guess I’m using the ‘Royal we’ because I don’t do anything.  My boys, John and Conor, and my husband whip up the most delicious and light pancakes.

My kids love cooking.  They like to make the flour mixture into a ‘snow’ mountain and they take turns mixing the batter from either side of the island.

We enjoy our pancakes as they are with vanilla and maple syrup or we like to mix it up with chocolate chips, strawberries or apples.  This morning we chopped up apples that we picked last weekend.  The pancakes were extra specially delicious this morning for some reason.

Well, our bellies are filled with light and fluffy pancakes and we are off to take Pop-ilicious for a walk, cheer on the participants in the Scituate Duatholon and go to the open house at the Fire Station.  Hope you all have a wonderful day!  
If you want to make pancakes, Luke and the boys use the recipes below.  We like our pancakes thin (a cross between an American pancake and a crepe) so Luke adds an extra cup of milk once the batter is mixed together.  Enjoy!
Light n’ Fluffy Pancakes (Trader Joe’s recipe)

1 1/2 C Baker Josef All-Purpose Flour
3 1/2 teas, Baking Powder
3/4 teas, salt
1 teas, baking soda
1 Tbls, granulated sugar
1 Egg
3 Tbls, melted butter

For slightly sweeter pancakes, add 1 teaspoon of vanilla extract.

1. In a large bowl, sift together flour, baking powder, baking soda, salt and sugar.  Make a well in the center and pur int he milk, egg, and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat.  Pour or scoop the batter onto the griddle, using approximately 1/4 C for each pancake.  Brown on both sides and serve hot.  Yields 6-8 pancakes.
