Salad Days: Homemade Potato Salad
We’re big potato fans and our homemade potato salad is a bowl full of comfort that pairs well with burgers or other salads.

Jump to RecipeOur oldest son, John, is obsessed with potatoes. We started growing potatoes at home a few years ago. The other weekend we harvested our red bliss potatoes which was a very exciting event:
We had a bumper crop this year!!!!
Tips for Growing Your Own Potatoes
- We grow seed potatoes. In the spring buy seed potatoes and let them sit in the sun for about 14 days before planting.
- Plant in buckets. We tried doing a giant whiskey barrel one year and we didn’t get many potatoes. We plant in buckets you can get at hardware stores, just drill holes in the bottom.
- You will see flowers grow and the potatoes are ready to harvest once the flowers and greenery die back.
Homegrown potatoes just taste better than store bought. They’re full of flavor and peel easier.
I love eating potato salad by the pool or on a picnic with my family. I love it with a BBQ but could happily just eat a whole bowl of potato salad for a meal!

Homemade Potato Salad
Ingredients
- 1 pound Red Bliss Potatoes
- 1 Cup Hellman’s Mayonnaise
- 1 Teaspoon Corn Oil or Vegetable Oil
- 1 Tablespoon Apple Cider Vinegar
- 1 Shallot, finely chopped
- Salt and Pepper, to taste
Method
Step 1 – Wash and peel your potatoes.
Step 2 – Bring a pot of water to a boil and make sure to add some salt. Boil for 20 minutes and drain once potatoes are cooked. Allow to cool.
Special Tip – I like to place potatoes on a plate so they cool quicker.
Step 3 – Finely chop a shallot. Mix together Mayonnaise, Corn or Vegetable Oil, Apple Cider Vinegar and add chopped shallots. Season with salt and pepper.
Step 4 – Quarter the cooled potatoes and fold into the mayonnaise mixture. Chill until ready to serve!
It tastes delicious cold!
You can also add fresh herbs to make more of an herb-y potato salad. I’m going to add chopped basil, tarragon, and parsley, which we have growing on the back deck, in the next batch!

- 1 cup mayonnaise Hellman's
- t teaspoon corn oil or vegetable oil
- 1 tablespoon apple cider vinegar
- 1 shallot chopped
- Salt and Pepper to taste
Instructions
- Wash and peel potatoes
- Bring pot of water to a boil and salt water Boil for 20 minutes and drain once cooked.
- Allow potatoes to cool.
- Chop shallot
- Mix mayonnaise, corn or vegetable oil, apple cider vinegar and add chopped shallots. Season with salt and pepper to taste.
- Quarter the cooled potatoes
- Fold potatoes into mayonnaise mixture
- Chill until ready to serve
- Serve chilled with chopped herbs on top.

I will try. We bought seed potatoes from Holly Hill Farm in April and cut them open and let them sit in the sun for about a week. Then we planted them in buckets early May. One year we did a very big barrel and weren’t as successful. xx
This reminds me of my mother’s potato salad–the only difference is she also adds chopped hard boiled eggs. Fresh dill would probably be a great addition too! Thank you for sharing, it looks delicious!
I’ll have to try adding boiled eggs. That sounds good. My mom always puts dill in, too, but my boys and hubby don’t really love dill so I didn’t put it in. xx
Hi…I made this potato salad yesterday. It was really good! I added a bit of red onion and dill. I had a couple of hard boiled eggs on hand and them to one half of the salad. The salad was good both ways. Thank-you for the recipe Danielle.
I like to add some chopped bread and butter pickles to mine along with a little of the pickle juice to my potato or macaroni salad.
