Slow Cooker: Taco Soup
Taco Soup |
A mother’s best friend is the slow cooker, but I completely forgot about my slow cooker until I saw the most delicious Tortillini Soup on Christine Marie Studio’s Blog. You need to try it!
Then, I remembered a twitter friend had told me about the most amazing Taco Soup he likes to make and how easy it is. So earlier this week, Conor and I got the crock pot out again and started cooking while still in our PJs (isn’t that the best?).
Here’s the recipe:
Matthew’s Taco Soup
INGREDIENTS:
1/2 lb ground beef
1/2 lb ground turkey
1 onion, chopped
1 (16 ounce) can chili beans, with liquid
1 (15 ounce) can kidney beans with liquid
1 (15 ounce) can whole kernel corn, with liquid
1 (8 ounce) can tomato sauce
2 cups water
2 (14.5 ounce) cans peeled and diced tomatoes
1 (7 ounce) can diced green chile peppers
1 (1.25 ounce) package taco seasoning mix
DIRECTIONS:
In a medium skillet, cook the ground beef and turkey until browned, over medium heat. Drain, and set aside.
Place the ground beef, turkey, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on Low setting for 8 hours.
That looks so yum! I love my slow cooker!
Thanks, Paige!
