Snowball Cookies
Snowball Cookies – A festive shortbread that’s perfect to enjoy at Christmastime.
This was my first time EVER making these cookies. I’ve had them at holiday parties and loved them BUT they always looked like they’d be really hard. So I put it off and put it off. You guys, this was so easy and I’m kicking myself for not trying to make these adorable cookies sooner.
My friend Krista is hosting a Christmas Recipe Hop as part of the Seasonal Simplicity Tour. So I thought I’d bring my snowball cookies 😉 I’m thinking of this as a fun, virtual pot luck dinner. I can’t wait to see what my friends are bringing. You can see all their recipes at the bottom of the post.
Aren’t they the prettiest cookies you’ve ever seen? They look so sweet on china plates. They’re perfect with a cup of tea or hot cocoa.
If you’ve been following along then you know I’ve been cleaning and doing LOTS of baking. I baked these the other day and I’m also making mince pies. Made a second batch of pies and snowball cookies and had them out for the Scituate Arts Association Home tour that was on Sunday. The tour went so well and I took a few photos, I’ll be sharing them later this week.
The pies and cookies were a big hit!
Let’s get all the supplies out and start baking! You probably already have some of the ingredients. Surprisingly, there’s only a few ingredients, so they’re quite simple to whip up.
How to Make Snowball Cookies

What You’ll Need
- 1 Cup of butter softened, I like Kerrygold Butter (salted)
- 1/4 Cup of Sugar
- 2 Teaspoon Vanilla
- 2 Cups all purpose flour
- 2 Cups chopped pecans
- Powdered Sugar
Method
Step 1 – Heat the oven to 325°F.
Step 2 – Cream together your butter, sugar and vanilla in a mixer.
Step 3 – Slowly add in your flour and mix on low until combined.
Step 4 – Finely chop pecans by hand or in a food processor and mix nuts into the batter. Make sure the batter is fully combined.
Step 5 – Shape dough into 1-inch balls. Place 1 inch apart onto lined cookie sheets. Bake 16 minutes or until very lightly browned. Cool 5 minutes; roll in powdered sugar while still warm and again when cool.
Don’t they look so pretty with all that powdered sugar?
So as I said, this was my first time making these cookies. The recipes I looked up online said they made 48 cookies, BUT I think I made mine slightly too large. Ha! Ha! I make my kids meatballs often, so I got into meatball-making-mode while rolling them. So I think my cookies are 2 inches. My family seemed to enjoy them meatball size though.
I couldn’t even wait until the boys got home from school to try them. Luke and I took a tea break and to test them out.
They are perfect with PG Tips tea. 😉
The cookies are just lovely, especially with the flavor of the pecans mixed with the powdered sugar. Very yummy scrummy.
They look lovely by the tree so would be great for a holiday party, hostess gift, or handmade gift. I have a feeling I’ll be making many more batches leading up to the holidays.

I love these cookies. My mom used to make them every year. My sister in law makes them now. They melt in your mouth.
I have been baking too. I love to bake. My husband laughs and wonders how I’m so disciplined and don’t eat them during the day.

I left a message right after you posted this recipe but maybe it didn’t go through or I didn’t hit send. The recipe for this cookie is only made with confectioner’s sugar, not granulated sugar. I checked every recipe I could find and they all call for confectioners sugar in the batter. Now that’s not to say your recipe won’t work because obviously they did but this is not the recipe almost overwhelmingly used by most bakers and it’s not the combination of ingredients commonly used. (They are called by different names, of course. Mexican wedding cakes, Russian teacakes, etc.)… Read more »
Hi Rebecca, thank you so much for your message. As a blogger yourself I’m sure you share on your blog what works for you. This is the recipe we make and it works for us. Since posting I’ve made it several more time. Each time with wonderful results. There are many wonderful recipes for cookies and this is just our version. Wishing you a very Merry Christmas.
I did find a very few recipes calling for granulated sugar. I’m going to try these and see if they are as good. From what I read, they are more tender with the confectioner’s sugar. I’ll give them a try your way and will let you know my “expert” opinion. I’m kidding. Merry Christmas to you as well.
