The Ultimate Three Cheese Nachos
Ultimate three cheese nachos are easier to make at home than you think! I’ve loaded three cheeses, black beans, cilantro and fresh produce from the supermarket.

We love to cook together as a family. My youngest son, Conor, dreams of becoming a chef one day. So the boys were excited when we headed to Big Y to purchase Heluva Good!® Cheese and found it in the refrigerated block cheese section. I don’t know about you guys, but my two boys LOVE cheese. I mean they can eat it until the cows come home. Heluva Good! Cheese has so many amazing varieties.
We bought three types to make our nachos super cheesy! We selected 8 oz blocks of Heluva Good! Jalapeño Jack, Heluva Good! Colby-Jack, and Heluva Good! Extra Sharp Cheddar. The first two are my kids’ favorites so we had to include them! The three cheese blend makes these nachos so unbelievable.
I mean seriously? Doesn’t that look delicious?
My boys love telling jokes and this one is currently their favorite:
“What do you call cheese that doesn’t belong to you?
Nacho cheese!”
So I started off by lining my baking sheet with parchment paper and loading on nachos, Heluva Good! Cheese, black beans and fresh grape tomatoes.
While the nachos were in the oven, I prepared the other ingredients. Since, it’s summer I used citrus and juicy pineapple. I also love adding cilantro for the flavor, creamy avocado and scallions. My oldest doesn’t love veggies but cheesy nachos are a great way for him to get those veggies in too.
These three cheese nachos were so quick and easy.
I transferred them to a vintage ironstone platter and piled them high with all the fresh ingredients.
The melted cheeses, the creamy avocado, the tangy lime and the meaty black beans make for unbelievable nachos.
Of course, the cheese was our favorite part.
I always try to get the chip with the most on it!
I had planned to serve these outside on our back deck, but the weather has been so wet and dreary. We enjoyed them as a family in the sunroom. The boys couldn’t wait to dig in!
I served them with sparking soda water with fresh lime for them and G&Ts for Luke and I.
All the flavors work so well together. The pineapple gives a sweetness for summer that is perfect and reminds me of piña coladas. It goes so well with all the cheese, especially the Jalapeño Jack!
There’s something about sweet and spicy together that makes mouths happy!
My kids are already asking me, “When can we make nachos again?”
They were so fun to make as a family and fun to enjoy. They were also very filling. Everyone was stuffed by this meal.
I only used half of each block of Heluva Good! Cheese for this recipe so we have plenty left for snacking. My kids love snacking on cheese and crackers after sailing camp or the beach. The recipe card is below:
- Parchment Paper
- White Corn Tortilla Chips (one bag)
- 4 oz Heluva Good! Jalapeño Jack Cheese (grated)
- 4 oz Heluva Good! Colby-Jack Cheese (grated)
- 4 oz Heluva Good! Extra Sharp Cheddar Cheese (grated)
- 4 Scallions (sliced)
- 2 Jalapeño Peppers (sliced in rounds, seeds removed)
- 1 Cup Grape Tomatoes (halved)
- 3/4 Can Black Beans (drained)
- Bunch Cilantro (chopped)
- Avocado (diced)
- Pineapple (diced extra fine)
- Lime (Zest and Juice)
- Preheat oven to 350 degrees.
- Line baking sheet with parchment paper and pour out tortilla chips evenly.
- Grate the three cheeses, layer half the cheese on and place black beans and tomatoes on tortilla chips, add the other half of the cheese on top.
- Place in the oven for 15 minutes or until the cheese melts and turns slightly golden brown. While the nachos are in the oven prepare the other ingredients.
- Once out of the oven carefully transfer your nachos to a serving plate.
- Top with the other ingredients and serve immediately.
- Enjoy!
My ultimate three cheese nachos are perfect for a fun family dinner but are also great for an informal gathering with friends for after beach cocktails or a BBQ! They are ready in minutes and don’t take much prep. I only had them in the oven for 15 minutes.
